Carrot & Thyme Dip

A dip based on the great carrot and thyme combo.

Ingredients

  • 2 large carrots (sliced)
  • 7-8 stalks fresh thyme (to taste)
  • 1 tbsp olive oil

Instructions

  • In a pan either steam or boil the carrots for 20 minutes.
  • Drain and add to a food processor. Remove the thyme leaves from the stalks and add to the food processor with the olive oil.
  • Blend to your desired consistency. Serve with oatcakes, veggie sticks, or on wholegrain toast.
  • Tip:
  • Add a tin of drained chickpeas and a little garlic to make this go further and increase your pulse intake.
