- 2 large carrots (sliced)
- 7-8 stalks fresh thyme (to taste)
- 1 tbsp olive oil
- In a pan either steam or boil the carrots for 20 minutes.
- Drain and add to a food processor. Remove the thyme leaves from the stalks and add to the food processor with the olive oil.
- Blend to your desired consistency. Serve with oatcakes, veggie sticks, or on wholegrain toast.
- Add a tin of drained chickpeas and a little garlic to make this go further and increase your pulse intake.
