Ingredients
- 1 tin mixed pulses rinsed and drained
- 1 aubergine, quartered
- 1 red pepper, chopped
- 150 g mixed green vegetables- tender stem broccoli, green beans and mange tout, chopped
- 1 tsp chopped garlic
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp madras curry powder
- 1 can chopped tomatoes
- ¼ cup water
- handful of chopped fresh coriander or parsley
Instructions
- In a large pan drizzle a little oil and sauté the garlic, add all the vegetables and mix until tender.
- Add the pulses, chopped tomatoes and water followed by all the spices and season with salt and pepper.
- Mix well and simmer for about 15-20 minutes until casserole has thickened and vegetables are cooked.
- Add mixture to a dish, garnish with herbs and serve with rice or couscous and some natural yoghurt.
Notes
You can add any types of vegetables, add sweet potato or potatoes and your choice of herbs and spices. This is a great meal to freeze to save time.
