Carrot & Thyme Dip
A dip based on the great carrot and thyme combo.

- 2 large carrots (sliced)
- 7-8 stalks fresh thyme (to taste)
- 1 tbsp olive oil
In a pan either steam or boil the carrots for 20 minutes.
Drain and add to a food processor. Remove the thyme leaves from the stalks and add to the food processor with the olive oil.
Blend to your desired consistency. Serve with oatcakes, veggie sticks, or on wholegrain toast.
Tip:
Add a tin of drained chickpeas and a little garlic to make this go further and increase your pulse intake.
